KIMCHI MISO DEVILED EGGS

Ingredients

Makes 12

6 pasture raised eggs, room temperature

1 whole avocado

1 tbsp + 2 teaspoons of white miso paste

2 tbsp of kimchi, chopped

Small handful of chives, chopped

A sprinkle of sesame seeds

1 sprig of dill

Instructions

1) Boil water in a pot and cook the eggs for 10mins. While the eggs are cooking, chop the kimchi and the chives. Remove the eggs from the pot and cool them in cold water. Peel the eggs, slice them in half and scoop out the yolks into a bowl.

2) Add the avocado and the miso into the bowl and combine until smooth. Put the egg whites on a plate and spoon the filling into them, or use a piping bag to fill in the egg whites.

3) Cover the deviled eggs with a small spoonful of kimchi, and a sprinkle of sesame seeds, chives ad dill.

* The avocado has a tendency to brown so make the mixture and fill the eggs just as you’re about to serve.
