GARLIC ROLLS

Ingredients

Makes 8-9 rolls


1/2 cup (90g) of gluten free plain white flour

1/2 a tsp of baking powder

1 tbsp of ground flaxseeds

1/4 tsp of salt

1/2 cup (140g) of coconut yoghurt

A bit of olive oil for shaping

Garlic butter:

2 garlic cloves, finely minced

2 tbsp of ghee(40g) or extra virgin olive oil

1/2 a handful of chopped parsley

Instructions

1) Combine all of the rolls ingredients, but the olive oil into a bowl. Let sit for 5mins while making the garlic butter.

2) Preheat oven to 180°C fan. Heat a pot over medium heat, add the ghee (or evoo), then the garlic and the parsley. Stir for 2mins then remove from heat and set aside.

3) Line a sheet pan with parchment paper. Rub a bit of olive oil on the palms of your hands, take about half a tbsp of the dough and shape into balls. Put the rolls on the lined sheet pan and brush them with the oil of the garlic butter (don’t put any garlic or parsley). Bake in the oven for 10mins, then flip the rolls over, brush them again with the oil, and bake for another 10mins. Remove the rolls from the oven and toss them well in the pot of garlic butter.
