CAULIFLOWER PIZZA BASE

Ingredients

1 small cauliflower, or 2 and 1/4 cups (280g) of cauliflower rice

1 tbsp of flaxseed meal

2 and 1/2 tbsp of water

1/2 cup (65g) of buckwheat flour

1/4 cups (45g) of brown rice flour

1 tbsp of psyllium husk

1 tsp of dried oregano or Italian seasoning mix

1/2 a tsp of salt

1/4 (pinch) of black pepper

Instructions

1) Heat a pan over medium/low heat. Cut and break the cauliflower into florets and place them into a food processor. Blitz the florets into rice size pieces (you can grate the cauliflower florets with a hand grater too). You should get 2 and 1/4 cups or 280g of cauliflower rice. Add the cauliflower rice to the pan, and heat stirring occasionally for 10mins. This will let the water evaporate from the cauliflower. Once cooked let the rice cool down a bit.

2) In the meantime, make the flax egg by combining the flaxseeds and water in a small bowl. Set aside. In a large bowl, combine the buckwheat and rice flour with the psyllium husk, herbs, salt and pepper.

3) Preheat the oven to 200°C. Incorporate the cooled cauliflower rice to the flour mixture. Add in the flax egg and mix the dough well with your hands. Shape the dough into a ball then cover and let rest for 5mins. Once rested, roll out the dough on a piece of parchment paper with the help of your hands and a rolling pin. Place the parchment paper with the pizza base on a sheet pan and bake in the oven for 18mins.op it with minced beef, fresh coriander, scallions and sesame seeds.

4) Remove the baking sheet from the oven. Cover the pizza base with your favorite toppings, and bake for another 5mins. Remove the parchment paper gently and enjoy.
