CUCUMBER, SMOKED MACKEREL & MISO SALAD
Ingredients
Serves 1
1 small cucumber
1 smoked mackerel filet
1/2 a nori sheet
Few stems of dill
Few stems of coriander
Furikake to taste
Chili flakes to taste (optional)
Fore the dressing:
1 tsp of white miso paste
1 tbsp of raw apple cider vinegar
1 tsp sesame oil
1/4 tsp of garlic granules
Black pepper to taste
Chili flakes to taste
Instructions
1) In a small bowl combine all of the dreading ingredients.
2) Slice the cucumber, and place the slices on a plate. Remove the skin of the mackerel and roughly shred it with your hands or a fork.
3) Place the shredded mackerel on top of the cucumbers, then pour the dressing over. Crinkle the nori sheet over the salad, and top with herbs, furikake and some extra chili if desired.
