CARDAMOM BUN BAKED OATS
Ingredients
Serves 1
For the baked oats:
1/2 cup (50g) of gluten free organic oats
1/2 a banana (about 60g)
1 large pasture raised egg
2 tbsp of almond milk
1 tbsp of hulled hemp seeds
1/2 tsp of baking powder
1/2 tsp of vanilla extract
1/4 tsp of ground cinnamon
1 tsp of ground cardamom
Pinch of salt
1 tbsp of ghee
For the icing:
1 tbsp of coconut cream
1 tsp of maple syrup
Pinch of ground cardamom
Instructions
1) Preheat the oven to 170°C fan. Blend all of the baked oats ingredients, but the ghee, in a blender until smooth.
2) Grease a heat proof ramekin with ghee and transfer half of the batter in it. Add a small nub of ghee then pour the rest of the batter. Top with another small nub of ghee. Bake in the oven for 20mins.
3) While the oats are baking make the icing. Combine all of the ingredients in a small pan over low heat until the mixture starts gently simmering. Pour the icing over the baked oats and enjoy.
