3 ingredient chocolate truffles

Ingredients

Makes 16 truffles

200g of dark chocolate (Minimum 70%, I use 85%)
170g (3/4 cup) of full fat coconut milk
1 tsp of vanilla extract
A pinch of salt

2-3 tbsp of raw cacao powder for coating

optional: 1 scoop of collagen powder

Instructions

1) Chop up the chocolate finely and place into a heat proof bowl. Heat the coconut milk in a pot until it starts simmering (you just want to heat it up slightly, careful not to boil).

2) Slowly whisk in the heated coconut milk into the chocolate (if adding collagen, add it here). Combine until smooth, and place the bowl into the fridge to set for 1h30.

3) Remove the bowl from the fridge. With a cookie scoop or a tablespoon, scoop 1/2 a spoon of the chocolate and shape into a ball with your hands. Repeat to form about 16 balls. Sprinkle the cacao powder on a plate and roll the balls into it. Store at room temperature of in the fridge if you want to keep them longer.
