Meal prep lemon and ginger shots

Ingredients

Makes about 14 cubes

4 organic medium lemons
2-3 tsp of grated ginger/ 1 thumb of ginger

Instructions

1) Juice the lemons. Roughly peel the ginger and grate it (alternatively you can blend the ginger piece with the lemon juice). Combine the lemon juice and the ginger.

2) Pour the juice into an ice cube tray and place in the freezer. Freeze until set (overnight).

3) In the morning, pop a cube out of the tray into a glass, and cover with warm water.
