Giant single serve gluten free cookie 

Ingredients

1/3 cup ( 40g) of oat flour

1 tbsp of coconut sugar

1/2 tsp baking powder

Pinch of salt 

1 tbsp of smooth peanut butter

1 tbsp of nut milk 

1/4 tsp of vanilla 

1 tbsp of melted coconut oil

20g of dark chocolate, roughly chopped 

Flaky sea salt to sprinkle on top

Instructions

1) Preheat oven to 180c. In a medium bowl combine the oat flour, sugar, baking powder and salt. Add the peanut butter, vanilla, and milk. Combine with your hands then add the coconut oil and combine. Fold in the chocolate.

2) Place a sheet of parchment paper on a sheet pan, and shape the cookie onto it. Bake in the oven for 17mins. Remove the pan from the oven, sprinkle some flaky sea on the cookie and let cool for 5 mins.
