Super fiber seed bread

Ingredients

Makes 1 loaf

1 cup of GF oats

3 tbsp of psyllium husk

2 tbsp of chia seeds

1/2 cup of ground flax seeds

1 and 1/2 cups of mixed seeds and nuts

1 tsp of salt

3 tbsp of melted coconut oil or ghee

1 and 1/2 cups of warm water

Instructions

1) Line a loaf pan with parchment paper. In a bowl, mix all the dry ingredients. Incorporate oil to mixture, then slowly stir in water.

2) Quickly, place mixture into loaf pan, and smooth it out with a spatula. Cover pan with a dish towel and let it rest at room temperature for at least 2h to 7h.

3) Preheat oven at 180°C. Place the pan in the oven and bake the bread for 30 min, then flip it over to the other side, back in the pan or directly on the rack, leaving the parchment paper on top. Bake for another 30 min covered, then remove the parchment paper and bake for another 15 min uncovered. Remove bread from oven/loaf pan and let cool on a rack.
