Chocolate chick’pea cookies

Ingredients

Makes 12 cookies

1 can of cooked chickpeas (400G), drained, rinsed and dried

1/2 cup of smooth 100% peanut butter

4 tbsp of maple syrup

1 tsp of baking powder

1/4 tsp of sea salt + extra for topping (flaky)

1/2 tsp of unsweetened vanilla extract

1/2 cup (52g) of dark chocolate, roughly chopped

Instructions

1) Preheat oven at 180°C, and line a baking tray with parchment paper.

2) In a food processor blend to a paste, chickpeas, peanut butter, maple syrup, baking powder, sea salt and vanilla extract. Gently incorporate chopped chocolate.

3) Take about 1 tbsp of dough, shape into a ball and place on the baking tray, flattening it down with your palm. Repeat. You should be able to make 12 balls. Sprinkle cookies with some sea salt flakes and place the tray in the oven. Bake for 17min. Remove from oven, let cool 5 min and enjoy.
