LEMON SLICES WITH MINT, ANCHOVIES AND CHILI

Ingredients

1 large organic lemon


6ish anchovy filets


1 red chili, sliced


Fresh mint leaves 


Flaky sea salt

Extra virgin olive oil

Instructions

1) Wash your lemon thoroughly. If it’s waxed you can cover it in a bowl with hot water and let sit for a few minutes, then wash. Slice the lemon thinly with a sharp knife.

2) Place the slices on a serving dish, and cover each slice with half of an anchovy, one mint leaf and a few chili slices. Drizzle a bit of olive oil over each slice and sprinkle with flaky sea salt.
