Giant pancake
Instructions
1) Heat coconut oil in a pan over medium heat. In a medium bowl, mash the banana with a fork and combine with the egg, vanilla and milk.
2) Whisk in the collagen, then the cassava flour, and finally the flaxseeds and baking powder, until well combined.
3) Pour the whole mixture into the pan, spreading it even on the pan. Cook for a minute until bubbles start to form, then cover for 4 mins. Uncover, and if the side facing up is dry, flip it over. Cook for another 3mins.
Enjoy the pancake with a berry compote, nut butter, or some cashew frosting…
