Buckwheat & multiseed bread (vegan)

Ingredients

1 and 1/2 cups (300g) of buckwheat groats

1 cup (150g) of mixed seeds (sunflower, pumpkin sesame, linseeds…)

2 tbsp of apple cider vinegar

2 tbsp of chia seeds

1 tbsp of psyllium husk

1 cup (225ml) of water

3 tbsp of extra virgin olive oil

1 tsp of pink himalayan salt

2 tsp of baking powder

Instructions

1) Add the buckwheat groats and mixed seeds to a large bowl. Fill the bowl with water (to the top) to soak the groats and seeds. Add apple cider vinegar, stir and let soak for 2h to 7h (overnight).

2) Preheat the oven to 170°C (fan). In a medium bowl, add the chia seeds and psyllium husk, cover with the cup (225ml) of water, and let soak for 20mins to form a gel.

3) When the groats and seeds are done soaking, drain them and pour them in a food processor. Add in the full content of the medium bowl with the chia/psyllium gel, the olive oil, salt, baking powder, and blend all the ingredients well. You will get a thick smooth dough. Line a loaf tin with parchment paper (if not using a silicone one), and pour in the dough. Flatten it out with a spatula. Sprinkle some extra seeds on top and place in the oven to bake for 1H30.
