Gut loving beef kimchi spring rolls
Makes 2 big rolls
Beef:
300g grass fed minced beef
3 garlic cloves, grated
2 tsp of grated ginger
1 tsp (or more to your liking) of gochugaru or chili powder
2 tbsp of tamari or gluten free soy sauce
1 tsp of arrowroot powder (or any starch)
1 tsp of honey
1 tsp Sesame oil
Sauce:
1/4 cup (70g) of tahini
Juice of 1 lime (4 tsp)
2 tsp of tamari or gluten free soy sauce
1/2 tsp of gochugaru or chili powder
1 Garlic, grated
1/2 tsp honey
2 tbsp water
8 rice paper sheets, or 16 if you do a second layer
4 leaves of baby gem salad (2 per roll)
4 tbsp Kimchi (2 per roll)
1 carrot, peeled and sliced into thin strips
1/2 Cucumber, sliced into thin strips
1) Heat a pan over medium heat. Drizzle some olive oil to coat, and add the minced beef along with the garlic and ginger. Stir, and leave to brown for about 5mins. Stir in the gochugaru, and then the honey. In a small bowl, combine the arrowroot powder with the tamari, and pour into the pan. Stir for a minute, until the sauce has thickened, then turn off the heat and set aside.
2) Prep the carrots and the cucumbers. If you have a julienne peeler it will go fast. Combine all of the sauce ingredients into a small bowl.
3) Prepare a piece of parchment paper on your countertop. Add some warm water to a deep plate and submerge a sheet of rice paper into the water. Remove the sheet from the water and place it on the parchment paper. Repeat the process with 3 more sheets, and place the second one next to the first one, and create a second row with the two other ones.
4) In the center of the 4 rice papers, add two lettuce leaves, and top with half of the beef, then some kimchi (about 1tbsp), a few coriander sprigs, and a handful of carrots, and one of cucumbers.
5) Begin by rolling horizontally and upward over all the components tightly, just until the filling is compactly enclosed. Then fold over the short sides and keep rolling upward firmly. I would recommend doing a second layer of the four rice sheets, to hold it all together well. Repeat the process for the second roll.
