Soufflé Omelette

Ingredients

Serves 1

3 pasture raised organic eggs

Salt and pepper to taste

Butter/ghee/olive oil/coconut oil for cooking

Instructions

1) Separate the egg whites from the yolks in two medium bowls. Season the egg yolks with salt and pepper, and stir to combine.

2) Heat a pan over low/medium heat. Whisk the egg whites until stiff peaks form. Combine the stiff egg whites gently with the yolks.

3) Add a nub of butter to the pan. Once melted, add the egg mixture to the pan, and gently lay it out evenly. Cover the pan for 4mins. * Uncover and fold the omelette in half with the help of two spatulas. Push the omelette to the sides of the pan to cook the edges for about 3mins. 

* If you choose to fill the omelette with vegetables or proteins, add them at this point on one side just before you fold the omelette.
