SNICKERS DATE BARS

Ingredients

Makes 14 bars

3 cups (460g) of medjool dates

4 tbsp of smooth peanut butter

1/2 cup (70g) of unsalted roasted peanuts

2 tbsp of ground flax seeds

1/2 tsp of sea salt

250g of dark chocolate (with no refined sugar)

Instructions

1) If your dates are dry, soak them in warm water for 10 minutes and then drain. If they are sticky and moist skip this step. Place the dates and peanut butter in a food processor and blend until a smooth paste is formed. Add the roasted peanuts, salt and flax seeds and pulse until the peanuts are roughly chopped and incorporated.

2) Line a baking pan with parchment paper. Spread the mixture evenly and firmly into the pan with your hands. You can wet your hands to make it less sticky. Place the pan into the freezer for 15mins.

3) In the meantime melt your chocolate in a double boiler. Add the chocolate to a heat safe bowl and place it over simmering water. Stir until the chocolate is smooth. Remove the date mixture from the freezer and cut into bars. Take 2 forks and dip the bars into the chocolate, tossing them on each side with the forks. Remove and put back on the parchment paper. Repeat with each bar. Place the bars into the fridge to let set for at least 40 mins (or more if you want them more crunchy). Store the bars in the fridge.
