Radicchio salad with grapefruit, olives and anchovies

Ingredients

Serves 4

2 radicchios

1 grapefruit

10g (big handful) of chives, chopped

1 big handful of pitted Kalamata olives

16 anchovy filets

Juice of 1 lime

Olive oil

Salt & pepper to taste

Instructions

1) Cut around the stem of the radicchios and remove the leaves. Cut your grapefruit into supremes.

2) Assemble the salad. Place the radicchio's leaves on a dish and place the grapefruit supremes and anchovy fillets over them. Sprinkle the chives and olives on top. Squeeze the lime and drizzle some olive oil on the salad. Season with salt and pepper.
