PICKLED RED ONIONS
Ingredients
Fills a 500 ml jar
1 red onion, thinly sliced
1/2 cup of raw apple cider vinegar
3/4 cups of water
1 tsp of himalayan pink fine salt
1 tbsp of coconut sugar
1 tsp of coriander seeds
1 tsp of black peppercorns
Instructions
1) Place the sliced onions into a jar. Heat a pan over medium heat, and add vinegar, water, salt and sugar. Bring to a gentle simmer, stirring occasionally.
2) Add the spices to the onion jar and pour the mixture over. Let the onions cool, then close the jar and store in the fridge overnight.
