Peanut chilli shirataki noodles 

Ingredients

Serves 1

240g of dried shirataki noodles or a pack of regular

For the dressing:

2 tbsp of smooth peanut butter
1 tbsp of tamari 
2 tsp of sesame oil
Juice of 1 lime
1 garlic, minced
2 tsp of grated ginger
1/2 a red chilli, minced
2 tsp of cooking water (or water)

Topping:

Fresh coriander 
Chilli 
Scallions 

Instructions

1) In a small bowl, combine the peanut butter, tamari, sesame oil, lime, garlic, ginger and chili.

2) If using dried shirataki noodles, cover them with boiling water for 5mins. Reserve 2 tsp of water for the sauce before draining (If you are not using dried noodle, use regular water for the sauce). 

3) Stir 2tsp of water in the sauce, then pour the sauce over the noodles and toss well. Top with fresh coriander, some scallions and some extra chilli.
