Mighty Granola

Ingredients

Fills a 1,5L jar

1 cup of walnuts and brazil nuts, roughly chopped

3/4 cup of almonds, roughly chopped

1 cup of mixed seeds

3/4 cup of coconut chips

1 and 1/2 cups of organic oats (GF if needed)

2 tsp of ground cinnamon

1/4 tsp of sea salt

4 tbsp of melted coconut oil

2 tbsp of maple syrup

1 tsp of vanilla extract

Instructions

1) Preheat oven to 140°C. In a large bowl, combine nuts, almonds, seeds, coconut chips, oats, cinnamon and salt. In a separate small bowl, combine melted coconut oil, maple syrup and vanilla extract. Pour liquid mixture over the granola mixture and stir well to coat every nut.

2) Line 2 baking trays with parchment paper and pour granola over them, making sure not to overcrowd the trays. The granola has to be well spread out (you can cook the granola in batches if you only have one tray). Place trays in the oven. After 15 minutes, pull the trays out and toss and flip the granola. Place the trays back in the oven to cook for an extra 20 minutes. Remove trays from oven and let the granola cool before storing it in a airtight jar. Your granola will keep for weeks.
