Fiber rich chicken cutlets

Ingredients

Makes 2 cutlets

2 free range chicken breasts

4 tbsp of chia seeds

4 tbsp of ground flax seeds

2 tbsp of psyllium husk

1 tbsp of garlic powder

1 tsp of sea salt

1 tsp of ground black pepper

2 tsp of ground turmeric

3 tbsp of arrowroot powder

1 large pasture raised eggs

Ghee for cooking

1/2 a lemon juice

Fresh herbs

Flaky sea salt

Instructions

1) First pound your chicken breasts between two pieces of parchment paper, to thin them out. In a bowl, combine the chia and flax seeds, psyllium husk, garlic powder, salt, pepper and turmeric.

2) Heat a skillet over medium heat. Make an assembly line with one plate of arrowroot, one plate with the eggs scrambled, and one plate with the seed mixture. Take one chicken breast, dip it in the arrowroot, making sure it’s well covered, then dip it on both sides in the egg wash, and finish in the seed mixture, making sure it’s well coated everywhere. Repeat with the second breast.

3) Heat a big nub of ghee in the skillet and place your chicken to fry for 4 min on each side until, crispy and golden brown. Set cutlets on plates and serve them topped with a squeeze of lemon, fresh herbs, flaky sea salt, and with a side of your favorite salad/slaw.
