Buckwheat banana pancakes

Ingredients

Makes 4-5 pancakes

2 ripe bananas

1/2 cup of buckwheat flour

1 organic egg

1/2 tsp of baking soda

1 tsp of ground cinnamon

1/4 tsp of sea salt

2 tbsp of water

Coconut oil or ghee to cook

Instructions

1) Heat oil in non- toxic nonstick pan over medium heat. Smash bananas with a fork in a medium bowl. Incorporate buckwheat flour, baking soda, salt, cinnamon, egg and water. Mix well.

2) The pan should be nice and hot by now. Fill a lid with batter and poor in pan. Cook each side until golden brown. Add more oil between each batch.
