Banana Marble Cake

Ingredients

3 ripe bananas

2 tbsp of maple syrup

3 pasture raised eggs

4 tbsp of smooth 100% peanut butter

1 tsp of vanilla extract

1/2 cup of coconut flour

1 tsp of baking soda

1/4 tsp of salt

3 tbsp of raw cacao powder

2 tbsp of hot water

Instructions

1) Preheat oven to 180°C. In a medium bowl, mash the bananas, then incorporate maple syrup, eggs, peanut butter and vanilla extract. Whisk until mixture is smooth. In another medium bowl, stir in coconut flour, baking soda and salt. Combine dry ingredients to the wet mixture.

2) Divide the dough between the two bowls. In a small bowl combine the cacao powder and hot water until it forms a paste. Incorporate cacao paste to half the dough in one of the bowls.

3) Line a loaf tin with parchment paper. Alternatively, place a tablespoon of each mixture into the tin to form a checker pattern, and do the opposite pattern for the second layer. Tap down the tin to smooth out the mixture. With a knife make a S shape vertically, then turn the tin around and make U shapes horizontally. Place the tin in the oven and bake for 45 min.
