Cinnamon apple stew with seedy granola 

SEED GRANOLA:
100g of mixed seeds
2 tsp of tahini, almond, or cashew butter 
1 tsp vanilla extract 
1 tsp Cinnamon
Tiny pinch of salt

APPLE STEW:

8 organic apples
About 1/3 cup of filtered water (enough to cover bottom of pot)
1 tsp of cinnamon (or more if you like)

1) Preheat oven to 170°C. In a medium bowl, combine all of the granola ingredients.* Pat down the mixture on a lined baking sheet. Bake in the oven for 20mins. Once baked, let cool before braking apart.

2) While the granola is baking, peel the apples or keep skin according to your preference (I do half and half). If you keep the skin make sure they are properly washed. Remove core and cut into large chunks.

3) In a deep pot, over medium heat, add water then apples and stir. Cover pot and cook until the apples are soft, stirring occasionally. When soft, stir in the cinnamon and let simmer for about 3mins covered. Remove from heat. Serve the apple stew, topped with some seed granola. 

*(The granola is not sweet, as the apples are already very sweet. However if you do prefer it that way, add 1 tsp of honey or maple syrup to the granola mix).
